Oh Baby! I Accidentally Baked That Favourite Moist Cake Of Yours!

Seriously,
until I was done with preparing the batter and poured it into the pan, I had no
clue I was attempting one of those cakes which he calls “sometimes soft,
sometimes moist and never stops praising”! Once I made it for his birthday and for
some reason, I was never able to recreate it. I really can’t conclude on a
reason why I did not try making it again, anyhow, it happened now!
There
was a time when I used to bake only chocolate cakes; baking with dark chocolate
is something I can’t resist. But here in India, it is so hard to get dark
chocolate with 70% or more cocoa; my chance of running into one with 45% or
cocoa is also very thin. The other day I dared to leavehim on an unattended shopping
and he came back with a dark chocolate… wait for it… compound (of all things)
and that too with just about 15% cocoa or so. These men, I say! That’s now
sitting pretty in my chiller. L
Now,
this one does not call for dark chocolate or any cooking chocolate for that matter
instead uses cocoa. And the best part is, “this can be boxed up, up to 3 months”!
Yes, this is going to replace your betty crocker or whatever box cake mixes and
guess what, makes exactly same or even better soft and moist chocolate cake. I’m
going to call it Super Moist Chocolate

This recipe is completely adapted from iambaker.net. This site is marvellous and has some gorgeous cake recipes. I am yet to
explore more. Someday, I will try a melted dark chocolate version of this and
that recipe is going to be detailed J
Super
Moist Chocolate Cake (chocolate cake mix can be stored up for 3 months)
I
halved the recipe from the original version here in iambaker.net and then sliced the cake into two and gave it buttercream frosting.
Buttercream Frosting
In my
last cake recipe I shared a killer buttercream frosting. This one is a modified
version of that. As recommended, I used store bought icing sugar this time, but
to be very frank, both I and my husband preferred the one I made with homemade
icing sugar :P To put in a better way, the homemade icing sugar version had
character! Check the recipe here.
Salted butter, ½ cup, in room temperature
Icing sugar, 1 cup (here I reduced sugar by 1 cup)
Heavy whipping cream, 2 tbsp (you could also try
with heavy cream, coffee creamer and the like)
Vanilla essence, 1.5 tsp
So, when some of you are at it, let me try another box recipe from the same site :P
